Sunday Social #1

Hello my beautiful readers! I have seen many fellow bloggers talking about specific topics on certain days, and I've been trying to figure out if I can come up with something like that. Then I actually came across this link on  Malorie's blog 'Life feels good in Portbail Beach' and tried I would give it a try. So here I go!

1. If you could only eat one thing for the rest of your life, what would it be?
Chicken tacos. I am obsessed with them!

2. What's your guilty pleasure/comfort food?
I have two. Chocolate pie and ice cream.
and to be more specific Burger King;s Hershey's Sundae Pie
AND Sonic's Oreo Blast!
3. What's the weirdest/craziest thing you've ever eaten?
One summer my family and I went to San Francisco and we went to a seafood place, we ordered the 'sampler' which came with 5 different appetizers and one of them was actually small fried balls stuffed with shark.Yup. I I've eaten shark,
4. What foods do you avoid at all costs?
Not a type of food in specific, I just tried to stay away from greasy food.
5. What meal reminds you of your childhood?
Ever since I was a little girl my grandma (mother's mom) cooked Tamales every Christmas, and she still does. It's a family tradition, we all get together and help my grandma cook them.
6. Share one of your favorite recipes and the story behind it.
I learned how to make Chicken Tostadas when I was younger, I remember my Mom and Grandma helped me. I can still picture that day, we were in my Grandma's kitchen and we were all having a good time. Just thinking about it puts a smile on my face :)

Ingredients

Crispy Tortillas
Vegetable oil for frying
6 white corn tortillas
Kosher salt for sprinkling 
Chicken
3 cups cooked shredded chicken 
1/3 cup freshly squeezed lime juice
1/4 cup olive oil
Tostadas
Refried beans
3 ounces of your favorite cheese
1/2 head iceberg lettuce, cored, shredded.

Directions

To make the tortillas: Pour the oil for frying into a large heavy-bottomed pot to a depth of about 2 inches. Place over medium heat and heat to 375 degrees F. Add the tortillas, one at a time, and fry until golden brown and crispy, about 1 1/2 minutes. Using tongs, transfer to a paper towel-lined pan and sprinkle with salt. Set aside.
To make the chicken: In a small bowl, mix together the chicken, lime juice, oil, coriander, and salt and season with pepper to taste. Cover with plastic wrap and set aside.
To assemble the tostadas: Preheat the broiler. Spread the beans evenly over one side of each tortilla and sprinkle with some of the cheese. Transfer to a baking sheet and broil until the cheese is lightly browned and melted, about 30 seconds. Divide the tortillas among 6 plates.
Evenly mound the chicken on each tortilla and top with the lettuce. Serve immediately.-SOURCE

  5. I LOOOOVE tamales! My mom usually makes them for Christmas too, but since I moved to the east coast I've been missing out on them :( That tostada looks so good! I'll have to try the recipe soon!
